This one is personal. Eddie Feliciano, who runs The Caterer LV, started his career in Puerto Rico, and this is the food of his family table. When we cook pernil, arroz con gandules and tostones, we are not interpreting a cuisine. We are cooking what we grew up eating.
Puerto Rican food is celebration food. A whole lechón for the holidays. Pernil and pasteles in December. Arroz con gandules that feeds a family reunion without anyone counting portions. We cook it in our own kitchen and we serve it the way it deserves, generous and hot.
