Italian is the food of the long table. Nobody stands on ceremony, the trays go down the middle, and second helpings are assumed. That makes it one of the most reliable menus in catering, and one of the easiest to do badly. Overcooked pasta in a chafer has ruined more office lunches than we can count.
We cook pasta to hold, sauce it at the right moment, and send it out with structure intact. Antipasti boards for the cocktail hour, baked mains like chicken parmesan and lasagna that actually improve in the pan, salads dressed on site instead of wilted in transit.
